INNA’S TOMATO PIE

Readers. Meet Tomato Pie. This is my Aunt Inna’s [not to be mistaken for the legendary Ina but Inna’s cooking sure does rival!] tomato pie. Y’all this stuff is out of this world and if you have never heard of tomato pie before, you must make this recipe and give it a try. I re-peat you MUST. I made it two different times down at the beach and it was a hit both times and often ended up being re-heated in the wee hours of the night. If you are trying to impress anyone this pie will totally do the trick.
Ingredients:
1 pack of frozen pie crusts [2 come per pack and you will need both]
1 large block of Extra Sharp Cheddar Cheese
4 medium sized tomatoes [the fresher the better]
1 vidalia or sweet onion
basil
salt
pepper
a spoonful of mayonnaise [gotta love Dukes]
1] Preheat the oven to 350 degrees. Once heated, place one of the frozen pie shells in the oven for about 10 minutes to brown a tad.
2] Slice the tomatoes and lay on a paper towel to absorb the watery moisture.
3] Slice [not dice] the onion.
4] Grate entire block of cheese and place in separate bowl. [Do not be tempted to buy the pre-grated cheese. It does not taste the same.] Add in cut basil, a little salt, and some fresh pepper. Bind it all together with a scoop of mayo. Then roll up your sleeves and put your hands to work! Mix everything up evenly.
5] Once the pie crust is lightly browned, begin layering the tomatoes and onion. One layer of tomatoes, followed by a small layering of onion. Continue this until the layers hit the top of the pie crust. Press it all down in there to make sure you can fit as many tomatoes as you can. 
6]Take the cheese mixture and pack it all on top to create a dome. 
7]Take the 2nd pie shell and place it upside down on top of the dome of cheese and then pull off the tin  lining. Press the edges of the crusts together. 
8] Use a fork to make a pretty design on top for ventilation. [Do you like my attempt at a sand dollar?!]
9]Bake for about 35 minutes or until golden brown.
10] Serve and sit back and wait for the compliments to come rolling in. Then be prepared to dish out the recipe because your guests WILL want it.
