PALEO CHICKEN SOUP + APPLE CRISP PIE

[Paleo Chicken Soup]

Paleo Chicken Soup:
2 large carrots
4 celery stocks
1 potato
1 box [carton] chicken stock
3 cups of water
2 tbsp of olive oil
2 tbsp parsley
1/2 tbsp celtic sea salt, pepper, thyme, celery salt
2 large chicken breast

*If I had these ingredients on hand, I would add 1 onion and 1 extra potato.

I was craving chicken soup so I looked in my fridge and sure enough, I had several ingredients that I deemed chicken soup worthy. I need to preface by saying I have never cooked any type of soup [does heating up Campbell’s count?] from scratch in my life. I started by adding the olive oil to a ceramic dish and added the carrots, celery, and potato. I let them sauté for a few minutes and then added the chicken stock, water, parsley, sea salt, pepper, thyme, and celery salt. At the same time, I cut the chicken into cubes and boiled it in water for about 10 minutes. Once that was finished, I shredded the boiled chicken and then added it to the soup mixture. Let simmer on low heat for at least 20 minutes [preferably one hour]. And voila, healthy chicken soup. With minimal effort I might add!

Paleo Apple Crisp Pie:

I was feeling ambitious in the kitchen and decided to try out a paleo dessert so I started with an apple pie. I used this Grain Free Apple Pie recipe and I was quite pleased. It takes time getting those taste buds used to sugar free desserts but I think this recipe was really good. William loves it! The only thing I changed was I added a cap full of vanilla extract and1 tbsp of honey to the crumble topping. Also, I did not have arrowroot or unflavored gelatin.
